Enchilada Chili




This recipe was a happy discovery.  I adapted it from a recipe my mother adapted from some cooking magazine.  My mother's recipe is for Spinach and Beef enchiladas. It is a fabulous recipe and if you want it just ask and I will get it to you.

I made this with ground sirloin but I think it would be just as good with ground turkey. This a cruise phase only recipe for protein and vegetable days.


Enchilada Chile

Ingredients:

2 - garlic cloves
1/2 - onion (chopped)
1 - green bell pepper (chopped)
1 lbs - ground sirloin
1 can - Hunts fire roasted diced tomatoes with garlic
1 or 2 cups - fresh baby spinach
1 packet - low sodium taco seasoning
2/3 cup - water
1 cup - fat free shredded mozzarella

Directions:

1.  Saute garlic and onions over medium heat. Once onions start to cook add green peppers. 
2.  Once onions are cooked through brown meat thoroughly.
3.  Add tomatoes and simmer for 2-3 minutes.
4.  Add fresh spinach. Simmer until spinach is cooked down.
5.  Drain off liquid and drippings.
6.  Mix taco seasoning packet with 2/3 cups water.
7.  Add seasoned water to beef in pan. return pan to heat.
8.  Simmer over low 5-10 minutes.
9.  Stir in cheese.

Makes 4 servings. Serve hot or refrigerate for later.
